Heeelllooo! Sorry I never did my lunch post, I was so slammed today that I worked through my lunch. My classmate and I went to do the video at the podcast studio and it was closed and we couldn’t find anyone to help us. So we went back to work and deiced to try back after work. So, I just worked through lunch to get through some stuff I needed to get done. I got tons done and feel so accomplished!!!!
Lunch was Amy’s minestrone soup with an Arnold’s sandwich thin and laughing cow cheese and a clementine on the side.
After work I headed to the podcasting studio and there was someone there to let us in. We did our videos and then headed out. It was strange to do a mock counseling session on camera. I have to admit, the camera made me a little weirded out. After filming the video, I hopped on the train and headed to my part-time job. I got a lot done there too. I was on a roll, just getting work done allll day long! By the time I got home I was hungry and tired. My brain was DONE!!!! I was craving Tex Mex. So, I made a black bean and cheese quesadilla.
Black Bean and Cheese Quesadilla:
- 1/2 a cup of rinsed canned black beans
- 1 whole wheat torilla
- 1/4 of a cup of reduced fat shredded cheddar.
I just added the beans and cheese to the torilla, folded it in half and pressed it on the Forman grill. On the side I had some garden salsa and a spoonful of plain fat free greek yogurt instead of sour cream.
I had a small side salad too: spring mix, red pepeprs, cucumbers and Light, organic Italian Dressing. NOM, NOM, NOM!!!! This meal was healthy, fresh and tasty…gotta love it!
After eating, I watched my video (while cringing- seeing myself on camera is torture!) and wrote my reflection on it. Tomrrow during my lunch break, I am meeting with my professor to go over my video with him. I have been go, go, go all day. After blogging I am doing the dishes and then finally relaxing a little. I deserve it!!!

Q: what is your wedding budget? who is paying for your wedding?
A: I don’t really feel comfortable putting a number of what my wedding will cost. But, my parents and Adam and I will be paying for it. My parents are paying for most of it (venue, food, bar, transportation, cake) and Adam and I will be taking care of the flowers, DJ, photographer, our attire, gifts (wedding party and parents) and other little things we wanted (cigar roller, lighting, favors ect).
Q: what kind of blender do you use for green monster’s?
A: I use a Cuisinart 7 Speed blender. It was a Christmas gift from Adam after the tragedy of my old one breaking.
Q: Do you ever experience any aches and pains when you run? I used to be able to run without any problems, but the older I get, the more joint pain or muscle pain I experience.
A: Nope, luckily (and I better no be jinxing myself) I run pain free for the most part
Q: what is adam’s job? does he work out?
A: Adam is Boston Police Officer. He does work out about 5 days a week. He is also a runner and weight trains as well. We both enjoy the same physical activities. We run together a lot in the summer when our schedules mesh better. We also run a lot of raced together, which you will see once race season is upon us.

Police Officers rock! (My hubby’s is one!) I’m running a Law Enforcement United 5k in two weeks to help families of police officers who’ve been hurt/killed in the line of duty.
