Apple Chicken.

Morning! I was so busy yesterday, by the time I got home all I wanted was my bed!

Around 11:15am I had a morning/pre-workout snack. IMG_2647.JPG

Carrots and almond butter. At 1pm I went to Body Pump, this snack held me over so well!!!! Body Pump in intense and this snack carried me through.

Lunch was a giant salad.

Contents: Spring Mix, Red Peppers, Cucumbers, Turkey, Goat Cheese, Hummus, Salsa. No dressing! Later on, to celebrate Tina’s cookie Friday I had some mini whole wheat cookies.

Sorry, they were eaten on the T so, the plastic bag is kind of in the way. At 4:30, I met May for coffee at Zumes.

We chatted for about an hour and then went to visit her Aunt Mary. Aunt Mary is 93 years old! It was good to see her, I hadn’t seen her in about 6 months.

Don’t know what to do with all those apples you got from apple picking?! Every year when we go (we haven’t been yet this year), I get so many apples and have a hard time trying to figure out how to use them all. One can only eat so many apples, and bake so many apple pies, right?!

I present you with an experiment, they turned out REALLY well. I called it…APPLE CHICKEN (so creative, right?!) This recipe is for two but I am certain it can double or triple quite well to suit your needs.

What you will need:

2 chicken breasts

1/2 of an onion

1 medium sized apple (I used Granny Smith)

Black pepper

1/2 a cup of apple cider

1/8 of an cup of apple cider vinegar

1 tablespoon of oil

Step 1: Chop the half an onion up and set it aside.

Step 2: Core, peel and cut the apple into slices and set that aside too.

Step 3: Sprinkle black pepper on both sides of the chicken breasts.

Step 4: Coat a large skillet with oil.

Step 5: Add the chicken and brown on both sides (about 5 minutes a side).

Step 6: Remove the chicken and add the onions. Cook onions until they are soft (about 3-4 minutes).

Step 7: Add apples and cook until they are soft and warm (for about 2 minutes).

Step 8: Add chicken to the skillet, along with 1/2 a cup of apple cider and 1/8 of a cup of apple cider vinegar and simmer for 5 minutes.

I served it over brown rice and with some broccoli, and called it dinner :)

It is tasty and super easy! It was great over rice, but noodles or mashed potatoes would work as well.

After dinner, I went to May’s house to hang out with her and my friend Kristie. We had a great night just watching TV and catching up. I had one of May’s homemade sugar cookies.

It was so good, May thinks they came out badly, I think she is crazy.

This morning I got up at 7am and decided it was a great morning for french toast. I used two slices of cinnamon raisin toast and coated it with a mixture of vanilla almond milk, egg whites and cinnamon.

I ate it topped with a banana, maple syrup and some blackberries.

I also had some coffee with vanilla almond milk too.

Today’s plans are :

Going to pick up my bridesmaid dress for Wicked Bride’s wedding. All the alterations should be complete. Followed by running some errands and them meeting my friend Belle for a secret mission.

    The secret mission sounds fun!

    The apple chicken looks great. I like adding apple chunks to salads or thin apple slices to sandwiches with cheddar cheese.
