Hey everyone! How was your humpday? Mine was awesome!!!
Let’s get back to the afternoon. I got an e-mail today about my workplace offering FREE yoga on Tuesdays from 12:45-1:45 during lunch. I was thrilled because I have class on Monday’s and Tuesday’s and don’t really get in a workout. So, this is perfect and works out well, I think two co-workers will be coming with me too! Yay for workout buddies!!!

My afternoon snack was a chocolate green superfood bar.

I also had a cup of coffee from the office coffee maker with some half and half and a little cinnamon.

After work I went to my part-time job to return some voice-mails, then I got suited up for a run. I was determined to mentally redeem myself after the blow my ego (and body) took on Sunday. I ran along the Charles River, which was perfect today since the weather was nice. I had a great run…but think I am getting blisters. Anyone know how to help running blisters? Prevent them? Protect them?
Run Stats:
5.6 miles in 49.32 minutes. Works for me! I focused on not trying to go crazy fast and just keep a decent pace and enjoy the run. I was so happy to have a great run after the disaster on Sunday.
Dinner was this recipe from this month’s Cooking Light. I love this magazine
First, I added 2 teaspoons of olive oil and one teaspoon of minced garlic to the pot with 1 cup of chicken sausage (the recipe called for turkey sausage, but I had chicken so I used that) and 1 cup of chopped green pepper (about 1/2 a pepper) and cooked it until the pepper was soft.

Once the pepper were soft, (about 3 minutes) I added a can of diced tomatoes with chili’s in them and 3/4 of a cup of fat free, low sodium chicken broth (I have tons of this left over, anyone know a good recipe that uses chicken broth?) and brought it to a boil.

Once it was boiling I added a can of drained and rinsed kidney beans and some shelled shrimp and simmered it covered for 6 minutes.

Finished product (with fresh parsley).

I had a soup bowl sized bowl of it, that I only ate 3/4 of.

On the side a had a piece of the not-so-great experiment from about a month ago that I froze. I defrosted it and added cheese to it and it was not too bad, much better for dipping into soup rather than as a meal itself.

All together!

This stew was seriously good! It has a little kick to it and is so flavorful! It was also super quick and east too! Oh wait….and healthy! I highly recommend it!
While making lunches I sipped some chamomile tea.

Well, I am off to bed I have a busy day of work and body pump planned tomorrow! See you guys in the am!
