Hi everyone! Happy Saturday! I got up at 7am for a run with Adam. We got up, got dressed and had a snack.

1/2 of a banana. We opened the door and saw this:

Yup, PORING!!! I mean HEAVY, HEAVY rain! I love running in rain, but heavy rain is blister city. We waited it out for a while, but it never let up. I did brave the rain though to get us some coffee from Zumes.

I got a medium, medium roast with vanilla and half and half. Saturday morning perfection!
I decided since we were up, we might as well have breakfast. Of course I had pumpkin on the brain. I got this pancake mix for $0.49 with a coupon a few weeks ago and decided to try it out.

I made the mix following the instructions, but added some cinnamon. I made Adam’s with just cinnamon. Want to guess what I added to mine???

YUP! Pumpkin!!!! Adam’s turned out awesome.

He got a little crazy with the toppings, I was so proud!

Earth Balance Vegan “Butter”, cinnamon, sliced almonds and pure maple syrup. He made sure to make it pretty for you guys!!!

Topped with sliced almonds, pure maple syrup and cinnamon. They were awesome…I heart pumpkin! I gave Oscar a little piece of one and he went nuts! This little guy loves pumpkin, just like his momma. Adam actually had to hold him while I was eating to restrain him!

Look at his face, he is staring at my plate. Look what happened when Adam let him go!

He was serious about these pancakes! Excuse our messy kitchen table, you can tell a food blogger lives here – camera battery charger and coupons and food company literature all over the table.
The pancakes were really filling I had about 1 and a quarter. Oscar had about half of one. Adam tried a bite too, and he liked them! YAY! Normally, he would think adding pumpkin to pancakes is yucky and wouldn’t even try it. I think I am getting to him (finally, after almost 11 years!)
Well, I gotta get ready, I am meeting Wicked Bride do go to her dress fitting with her, then get my bridesmaid dress altered. We are going to lunch after.

Your pancakes look so good… How much pumpkin did you add? Did you adjust the recipe in any other ways to compensate? I’ve never made pumpkin pancakes before. Thanks!

They were totally an experiment for me too, I had never made them before. I didn’t measure the amount of pumpkin (sorry, I never do). I didn’t adjust the recipe at all because I made the mix normal for Adam’s pancakes then once those there on the pan, I added the pumpkin to make mine. I hope that helps.
