Hi everyone, how did your day go? Mine was jam packed! I actually debated not blogging and hitting the hay instead. But, here I am! Around 3:00pm today I met Melissa for coffee. I ordered a grande skinny vanilla latte. I ate it with a Carrot Raisin Muffin Top that Penny’s Low Fat Desserts sent me.

I really enjoyed this snack/treat.

It had pieces of shredded carrots and a good number of raisins. I really dislike raisin overload, this muffin top had the perfect amount. It was really soft and “hydrated” (I hate the word moist). Super yummy! I can’t wait to try the other stuff Penny’s sent me. Thanks Penny’s!!!
You may or may not have noticed that I have been consuming a lot of coffee lately- two cups a day. I am not sure why this is, but I have been just craving the taste of coffee. I am going to work on cutting it back to my normal 1 cup a day. Let’s see how it goes.
After work I walked to my part-time job. I had two appointments with customers one at 5:30 and one at 6:00. The person at 5:30 never showed (she actually called after and rescheduled for tomorrow, some weeks I am there every single day!!) and the one at 6pm was late. Annoying, but I got some reading for school done though, so I guess it wasn’t a huge loss.
After 6:30 I got to the gym, changed and hit the elliptical for a sweating 45 minute cardio workout. I did the random hill setting at level 7. I have decided that on days when I do legs, I will use the elliptical instead of run. My legs get less tired and I am able to work them more that way.
Workout:
Legs:
- 3 sets lunges with 8 lb. weights in my hands (12 reps per set)
- 3 sets of squats with a 40 lb. straight bar across shoulders (12 reps per set)
- 3 sets of calf raiser 77 lbs (15 reps per set)
- 3 sets of side kicks using body weight (15 reps per side on each side)
Abs:
- 3 sets of 25 crunches
- 3 sets of reverse crunches with a ball between ankles (15 reps per set)
- 3 planks held for 90 seconds
- 3 sets of side planks with a twist, 10 reps per set, on each side
When I left the gym I was sweaty and hungry. What a great workout! For dinner I wanted something tasty and fast. I decided to make this:

I beefed it up with some spinach and lentils! It was awesome, and cooked up really fast. It made three servings, so expect to see some for lunch tomorrow. If you like couscous, I really recommend this it is yummy and cooks up in about 10 minutes.

So I would try the meat free chicken steaks. I am a vegetarian and I am always looking for healthy meat alternatives. I like that it only has 5g of fat but 9g of protein!
